Product in the Principality of Asturias is undoubtedly the most typical and well-known Spanish cheese which has been recognized the PDO since 1985. It is traditionally made from a mixture of cow's milk and goat-sheep but in winter it is allowed to use only cow's milk as it is impossible to raise sheep and goat milk. Blue Cheese penetrating aroma and intense, creamy to the point that it can be spread on bread and served with cider or wine accompanied by a sweet and dense meditation, such as the Pedro Ximénez. The seasoning is 3 to 6 months, and is carried out in natural caves aired from cold winds, damp, salty the Bay of Biscay, in which the presence of penicillium roqueforti causes the cheese is naturally infiltrated by the typical mold.
