This is the only sheep's milk cheese made of spun paste. The origin of the name is controversial and could come from the bottom plate that presses the dough gives the classic disc-shaped, but also from "Guastella" in reference to the speed with which, especially in the summer, milk acidifies and will fail if not is coagulated. Produced from raw sheep's milk in the valley of the Belice river, between the province of Palermo, Agrigento and Trapani, is a fresh cheese with spun dough, soft and omogeneea. Without rind, from the fine flavor and acidity, with pleasant hints of fresh sheep's milk. It has a long maturation period (it is ripe already after two days) and therefore has a slightly herbaceous flavor: for all these carattersitiche its goes very well with fish and shellfish.
