Pearly, small and thin skin, the Sorana bean is grown in small plots of land along the river Pescia: a few acres of "new lands" reclaimed by the Medici in the sixteenth and seventeenth centuries. Made fertile shores of the river on which the inhabitants of the area cultivated legumes and vegetables intended for small businesses, which are useful to supplement their meager incomes of families in the mountains of Pistoia. The areas of the torrent reclaimed for agricultural crops were divided between those who had contributed their work to the reclamation, which is why, even today, the owners of the land are many. The cultivated area covers approximately four kilometers of the river, especially on the left bank, between the Ponte di Castelvecchio and Ponte di Sorana, in the municipality of Pescia. Farmers in the area have been handed down for centuries the seeds. They say that the same small beans, called piattellini for the flat-shaped, flattened, slightly arched, grown in other areas are not so good: in the plains are cannellini whatsoever. The collection, manual, takes place in the month of September.
The beans are then exposed to the sun for 3-4 days to complete drying. During the winter are kept in special containers with the addition of peppercorns, valerian roots or leaves of laurel. Tasty and easy to digest, is the protagonist of several recipes but the best way to enjoy it is cooked "the flop," or in glass containers with large openings that in Pescia called goiters. At the time of cooking beans join the water source, which should never be too chlorinated lime or worse, a clove of garlic and sage. You then cook on low heat. After cooking, season them with a drizzle of extra virgin Tuscan olive oil and freshly ground white pepper fresh.

Optimum altitude, between 200 and 750 meters above sea level, the abundance of shallow water limestone, a good percentage of humidity and good sun exposure, well-drained soils and loose, sandy: a successful collaboration of different elements produces beans across, little known outside of Tuscany but the subject of a thriving market "false." The annual production is minimal and you can tell that the people of Pescia now know meter by meter the best land: impossible to justify the quantities sold as Sorana beans marketed outside the area. For this reason the Presidium producers have signed a specification that defines the area of production, regulates the agronomic and identifies the bean bags.
