Before the white man arrived in Canada, the American Indians had learned to take out a lymph dall'Acero rough. In early spring the Indians practiced a cut in the bark, and after placing a bowl under the tree, I gathered up the juice. This was then placed in containers of clay, put on the fire, and after a slow boil, turned into a thick syrup and sugar. A century later were refined the techniques of collecting while also allowing the trade of maple syrup in other countries. Of the six species of maple that exist in Quebec, only two are suitable for the production of syrup. During the growing season (winter) the plant accumulates reserves of starch at the thaw and with the help of particular enzymes, is transformed into sugar which goes into solution with the accumulated water through the roots. The alternation of frost and thaw altering the pressure conditions inside the plant, this process triggers the production of lymph. Sostanzaialmente the production of the syrup Maple has not changed, this means that the product is completely organic and natural.
