The salt of Guerande, takes its name from the town of the same name, located in the department of Loire-Atlantique. The story goes that between 854 and 859 monks St.Sauveur de Redon are donated several salt marshes in the peninsula of Batz, Brittany, which are transformed into salt. Thanks to the strong tides the sea water enters the system of the swamp slowly enters decantandosi and producing a gradual concentration of salt. In the basin of the salt concentration continues under the influence of the sun and the wind, up to saturation and the crystallization of sodium chloride. It is collected again in a traditional way, according to the ancient Celtic method that involves the use only of wooden blades and not of metal, which could contaminate the purity. The salt then drips naturally before the open air, then type in local attics. This salt is not treated with bleaching and does not suffer any kind of refining, which is why retains its characteristic gray color.
