A pit dug in the tuff sulfide to mature, as in a womb, is the magical place where for three months old tradition of Sogliano the Rubicon (Forlì-Cesena) who wants to retain a mixed milk cheese (preferably one sheep).
The fresh cheeses are stored in the first days of August in the pits, where they remain for about three months, until the day of St. Catherine, in November. The cheese, due to the process of anaerobic fermentation and the overlap of the forms, is very deformed with respect to the initial cylindrical shape. The color is white to pale yellow, the flavor is delicate, almost sweet taste of early, then becoming more and more spicy with a bitter aftertaste. It has a peculiar odor reminiscent of the humus of the undergrowth. Recommended wines: Rosso Piceno, Sangiovese.
